tuna: The Tarantello is obtained from the lower abdomen tuna steaks in between those selecting more fat and thin ones.
The name comes from Taranto, which was home to ancient traps: the name "Tarantella" appears first in the list of a dinner given by Cardinal Campsites Emperor Charles V of Spain in seconds. XVI own in Taranto, where its manufacturing technique migrates into traps of Sicily and Sardinia (then belonging to the crown of Spain) and in particular the area of Carlisle and Portumna, the only one in which she remained until today.
Differs from the stomach, because it preserves much of the flavor, without being oily texture; differs from the tuna itself because it is softer.
